Our Weekend
Was pretty laid back and boring….that’s pretty much how they all go. After years of Nic working 6 or 7 days a week and us rarely all being home together, we like our boring, all PJ wearing weekends.
Sat. we actually ventured out of the house (shocking, I know). We had Jack’s basketball class and then hung out at Barnes and Noble for awhile.

Then I made the bomb chicken. OH MY GOSH. I mean, I know it’s kinda messed up that I cooked on Mothers Day, but it was my choice, and this meal was amazing. It was the whole organic chicken I bought last week seasoned with butter (Uh, LOTS of butter), kosher salt, pepper, garlic, rosemary and onion. Mmmmm……. Then I got a little carried away with the potatoes, but they were the BEST potatoes I have ever had. Baby reds, with butter, milk, plenty of garlic, rosemary, sharp cheddar, kosher salt, pepper. Yum yum yum….
